
The Verdict
Calabria is for travelers who've done the famous south (Campania, Puglia) and want the raw version. The coast (Tropea, Scilla) is the draw, the interior mountains (Aspromonte, Sila) are empty, and the food — nduja, swordfish, pecorino — is fiery and excellent. It's poor, the infrastructure is thin, and it's not for a first Italy trip. But it's the most authentic southern Italy you can still have largely to yourself.

Soppressata di Calabria
The soppressata is a traditional product of Southern Italian peasant life, where no part of the pig was wasted. Its name derives from the practice of pressing the salami under weights during drying to give it a flattened shape. In Calabria, the tradition is defined by the heavy incorporation of local chili peppers.

Nduja is a fiercely spicy, spreadable salami from the Vibo Valentia area of Calabria. It is a byproduct of the tradition of not wasting any part of the pig, blending meat with a high percentage of local chili peppers. It has gained widespread fame recently as the most explosive and savory cured meat in the Italian south.
